Every few months a video goes around showing a spoon of honey dropped into water, or a matchstick dipped in honey and lit. The claim is that pure honey sinks or burns. It is a neat trick, and it tells you very little.
Why the popular tests fail
Thick syrup dissolves slowly in water whether it is honey or sugar syrup. Honey that has picked up a little moisture can fail the matchstick test, and a clever syrup can pass it. The tricks are not made by people with lab equipment, and a kitchen cannot copy what a lab does. India has had real trouble with honey adulterated with sugar syrups, and the better detection happens in testing labs, not at the dining table.
What you can actually check
Where it comes from. A seller who can tell you the region, the season and who collected it is a good sign. “Natural honey” with no story behind it is not.
Read the label. It should list honey and nothing else, with an FSSAI licence number and a batch or best-before date. If the ingredients mention syrup, sugar or “invert”, it is not pure honey.
Look at how it behaves over time. Raw honey often crystallises in a few weeks or months, especially in cooler weather. People throw away perfectly good honey because they think it has gone bad. It has not. Stand the jar in warm, not boiling, water and it turns liquid again.
Taste and smell. Good honey has a flavour that changes with the flowers the bees visited, sometimes floral, sometimes a little bitter or woody. Flat, one-note sweetness is a reason to be careful.
Price is a clue
Producing honey takes bees, time and labour. If the price per kilo is far below what everyone else charges, ask yourself how.
Using honey well
Honey is still sugar, so enjoy it in sensible amounts. It goes well in warm (not hot) water with lemon, in tea once it has cooled a little, or drizzled over curd and fruit. Please do not give honey to babies under one year old.
We sell Indian bee honey in more than one pack size. You can see the options in our shop, and if you want to know more about it before you order, just message us.
